Veggie & Chickpea Coconut Curry (Mild)

A mild curry the whole family can eat from the same pot, using a genuinely gentle spice blend rather than a "kids' version" and an "adults' version" cooked separately.
Ingredients
- 1 tbsp oil
- 1 onion, chopped
- 1 tbsp mild curry powder (not hot)
- 400g tin chickpeas, drained
- 400ml tin coconut milk
- 200g mixed vegetables (carrot, pepper, peas)
- Rice, to serve
Method
- Soften the onion in the oil for 5 minutes.
- Stir in the mild curry powder and cook for 1 minute until fragrant.
- Add the chickpeas, coconut milk and vegetables.
- Simmer for 18-20 minutes until the vegetables are tender and the sauce has thickened slightly.
- Serve over rice, cooled to a safe temperature for little ones.
Tips
- Double-check your curry powder blend is genuinely mild — brands vary hugely, so taste a small amount before committing to the whole family pot.
- Adults can add fresh chilli or hot sauce to their own bowl.
