Sheet-Pan Salmon, New Potatoes & Green Veg

Oily fish is recommended once or twice a week for the whole family, and this sheet-pan approach makes it as low-effort as any other traybake.
Ingredients
- 4 salmon fillets
- 500g new potatoes, halved
- 200g green beans or broccoli
- 1 tbsp olive oil
- Lemon wedges, to serve
Method
- Preheat the oven to 200°C (180°C fan).
- Toss the halved new potatoes in olive oil on a baking tray and roast for 15 minutes.
- Add the salmon fillets and green vegetables to the tray, drizzle with a little more oil, and roast for a further 12-15 minutes until the salmon flakes easily.
- Check the salmon thoroughly for any small bones before serving to young children, and flake into smaller pieces.
- Serve with lemon wedges for the adults.
Tips
- Flake the salmon and check carefully for bones on younger children's plates specifically — it's worth the extra thirty seconds.
- Swap in whatever green vegetable is in season or in the fridge.
