A dependable batch-cook breakfast: the riper the banana, the sweeter the pancake, with no need for added sugar at all.
Ingredients
- 1 ripe banana, mashed
- 1 egg
- 100g wholemeal self-raising flour
- 100ml whole milk
Method
- Whisk the mashed banana and egg together.
- Gradually whisk in the flour and milk until you have a smooth batter.
- Cook small spoonfuls in a lightly oiled non-stick pan over medium heat, 1-2 minutes per side, until golden and cooked through.
