Mini Veggie & Cheese Frittata Bites

A batch-cook that pulls its weight: protein, vegetables and a toddler-friendly shape in one bake, ready to grab from the freezer on busy mornings.
Ingredients
- 6 eggs
- 50g cheddar, grated
- 50g spinach, finely chopped
- 50g sweetcorn
- A splash of milk
Method
- Preheat the oven to 180°C (160°C fan) and grease a 12-hole muffin tin well.
- Whisk the eggs with the milk.
- Stir through the cheese, spinach and sweetcorn.
- Divide between the muffin holes and bake for 15-18 minutes until set and lightly golden.
- Cool before serving; cut larger bites into smaller pieces for younger toddlers.
Tips
- Freeze in a single layer first, then bag — prevents them sticking together.
- Reheat from frozen in the microwave in short bursts, checking the middle isn't still cold.
