## Ingredients

 
 * 1 tbsp olive oil
* 1 onion, chopped
* 500g beef or turkey mince
* 400g tin kidney beans, drained and rinsed
* 400g tin chopped tomatoes
* 1 tsp mild paprika (not hot)
* Rice, to serve
 
 
## Method

 
 * Soften the onion in the olive oil for 5 minutes.
* Add the mince and cook until browned.
* Stir in the kidney beans, chopped tomatoes and mild paprika.
* Simmer for 20-25 minutes until thickened.
* Serve over rice, with hot sauce or chilli flakes on the side for adults to add to their own portion.
 
  
## Tips

 
 * If cooking dried kidney beans from scratch rather than using tinned: they must be boiled vigorously for at least 10 minutes (not just simmered) to destroy a natural toxin present in raw or undercooked beans — tinned kidney beans are already fully cooked and safe to use straight from the tin.
* Freezes well in portions for quick midweek dinners.
